Update to OS 4.0 thru iTunes to get some updates to help you manage your app icons and email folders.
Apple accounts and cart info:
Apple support says if you have a site license, you can sync all 30 at one time on your sync cart. If not, you can only have up to 5 "synced" to one account. You may put the purchased app on these 5 only. I will need 6 accounts for my 30 ipads.

These are both free and include terrific lectures so you can learn wherever you are. You can purchase monthly access cheaply to get even more lectures. Basically a class in an app. Haven’t seen on like that yet.
